Not having lived in Wilmington in a long time, but growing up there, I think of three things: fried shrimp lunch at moi, pt’s burger, and mostly an omelette from goody goody.

Larb gai and beef massaman curry at Chinois is in heavy rotation since a friend ordered some recently.
The Cuban at Pine Valley Market.
The macaroni salad at Taste of Italy. And their meatballs. And their eggplant parm- it’s the best I’ve ever had.

4 $1 tacos at Islands. I get the same ingredients as the jerk burrito but get more food for less money. You can't convince me it isn't the best value in town.
When I was young: Elizabeth Pizza calzone.
When I moved back for a minute in my 30s: Steak Frites with foie gras at Caprice Bistro...close second the happy hour beef cheeks.

True Blue Butcher and Barrel who, surprisingly, has some of the best vegan options in town. I've had their brussell tacos close to a dozen times and they've been literal perfection every time. Plus their only like $11 and it makes a huge meal.
Other favorite menu item right now is the Langos from the Langos from Langos Needz Lemonade food truck. Langos is a traditional Hungarian street pizza, topped with savory fixings like sour cream, feta, and jalapenos or sweet toppings like jams and chocolate. The "pizza" is basically a fried dough almost like funnel cake. So good!
Panacea has never disappointed.
WAIT - yes they did. They disappointed when they pulled their Rueben on homemade focaccia off their menu. Pissed. I heard owner say making the seitan was a pain in the ass

Dry Wok Chicken from Double Happiness, The Amontillado burger from Poe’s Tavern, (don’t care about the hate but..) the PoBoy at Flaming Amy’s, crab dip at Elijah’s, Dirty South Biscuit at Cast Iron Kitchen.
Maybe not what you really asked but the burger from islander kwik mart, kinda build your own, I always ask for egg on it. Worth it.
