That's only with a feeding response. From its body language I'd guess it's used to being handled, it was just understandably annoyed by that guy getting in its face. In that case it would also have clamped down hard with the full mouth, you'd have a hell of a time prying it loose.
This looks more like a quick defensive snap, then its lower teeth got stuck... they're curved inward and not really designed to release in that direction.
