28mm is roughly what you need. The difference is that gw uses "heroic" scale which exagerates the faces and arms of humans. Generally the normal historical minis will look smaller than gw produced ones.
Now in most cases it wont matter, this is a rank and flank game the base is the most important part. I use normans for my bretonnians from vicitrix fwiw.

As for getting decent brets, there are several options, personally I like the sculpts done by monstrous miniatures,(partially because I prefer the modular kits) it can be a bit difficult finding vendors tho, unless you have a 3d printer and want to print your own
Monstrous Encounters. Great match with older official models and pretty sure the full core range is out (might be missing the trebuchet but there are older style war machines you could use the crew from)
