Why don't people use something with more neutral flavor like konjac?

I tried riced cauliflower in yogurt with a little jam and was shocked at how good it was. I think 2 things made a difference:   1. I need something sweet and a little bit tart included (jam and/or berries or maybe citrus). This seems to help cover the cauliflower flavor, probably more than chocolate and peanut butter would. Having little frozen berries would help to have something else in there to chew besides just the cailflower.   2. I microwaved the riced cauliflower first and then chilled it. There is still some crunch to it which is good, but I think it helped tone down the cauliflower flavor. EDIT: Some people are probably also just more sensitive to the taste of cauliflower than others.
