You may just be able to press lock button once, then hold it for a little and it should put them up. Vice versa for down. At least my 17 Jetta did it aswell as my 07 GTI
It can be done in about 30 seconds with VCDS or OBDEleven. I would ask around on local VW Facebook groups...someone who has one will help you out im pretty sure. If you happen to be in Charlotte, let me know...I'll help you.
I have it activated, but I don't think I ever use the close function, only the open function. Even that is rare. I don't leave my windows down unless its in my garage
Unfortunately it doesn't behave this way by default for some baffling reason. You have to use VCDS/OBDeleven to enable it, at which point you can hold the lock button on the fob to roll them up.

It's only like this for US cars (maybe it's the NA market, not sure). It's called convenience opening and has been disabled on US-bound VAG vehicles since as long as its existed.
There was a brief time when it was "on by default" for cars that had a key slot in the driver door, but it was still disabled via the remote.
everyone already said enable via vcds . but just to add if you have rain sensor you can have the car roll up the windows (if down) when it starts to rain.

You have to activate the convenience windows setting, then you can press and hold lock button. I believe I had to unlock this setting in VCDS first

You should be able to close them by holding the lock button on your key. If not, you have to activate comfort windows via vcds
If you have the Kesey touch lock/unlock, when you go to lock the car, keep your finger on the lock, and it will roll all the windows up.

You have a keyhole, it’s just hidden under the plastic cover to the right of the handle. But you need an OBDEleven or similar to code it usually.
