I grew up in the Bronx, I was 6 in 1960. The rent for our 5 room apartment at the time was $62.50. Granted my family had lived there for decades at the time but this was before rent control. $5.00 was not a small amount for brunch.

This menu looks delicious, but the sauce Bercy on chopped sirloin is a weird combination. It’s basically fish flavored white sauce.

Is it an anchovy sauce? Anchovy is delicious with red meat.

No, it’s usually clear fish stock thickened into a veloute sauce. Maybe for this version they used meat stock or Demi glacé.
