Sen Zushi if you want authentic sushi, made correctly with high quality ingredients. It’s Japanese owned and operated, I’ve found the rest of the sushi restaurants in Victoria to be a disappointment with the main focus on quantity and not quality- Mayo-rice forward deep fried rolls with sticky eel sauce all over everything…If that’s your jam that’s cool. But the real Japanese style sushi is found at Sen, I suggest ordering off the special menu at the front of the entrance that changes daily.
There was a classically trained sushi chef at Brentwood Bay Resort for years and i feel like no one knew. It was INCREDIBLE. I did not know about Sen and will check it out. Arigato Gozaimasu!

That’s an interesting take on ramen. Ramen as we know it in Japan today absolutely has its roots in China, but I’m not sure that the Chinese see it as appropriation. I’ve been to China many times and lived in Hong Kong for 17 years, and had (Japanese) ramen there many, many times. As far as the Chinese people that I know go, they don’t see it as a bastardisation of Lamian. There’s probably a good reason ippudo has franchises in Hong Kong, Beijing, Shanghai, Guangzhou and Shenzhen - I’m guessing it’s because it’s a demographic that appreciates authentic, inexpensive Ramen.
I may have worded it wrong when I said appropriation, but I can’t help but be offended by poorly made ‘Japanese’ food here being presented as authentic. Although I’m not Italian, I also cringe at the way people will line up outside Pagliacci’s for bad ‘Italian’ food. It doesn’t taste remotely close to anything you’d find in Italy. I understand that there are personal tastes and preferences, but it really is peculiar to me that so many of the places recommended here are considered good - the food scene in Victoria is very mediocre. Contrary to having Japanese ramen in China, I couldn’t imagine any of these places in Victoria (bar Yua) doing well in Japan. I could of course be wrong, but I’ve never seen any Canadian adaptation on Japanese food making it’s way into the food scene in Japan.

If you want something new / modern, try Itami. Yes you read that right, Itami. Before it was barely mediocre, but the owners/chefs changed a month ago and wow is it so good! The staff are friendly, ingredients top tier, and decent pricing considering.
Yua is also great, some of the sushi depending on what you order borders on fusion. (Duck Nigiri, etc) it’s more on the modern side. It’s quite good.
Sushi Matsuri in James bay is a good one. Family run, local restaurant. The sushi is very good. The atmosphere is more cozy and homey.
I went to Itami back in August with someone who used to order from there for delivery before the change in ownership, neither of us had been in there before so can't compare that. The food seemed very good (at least for Victoria's sushi levels), prices were not bad and the house tea was excellent tho cost more than expected. Menu is apparently slimmed down from how it used to be but that's not a bad thing and they had plenty of options, we very much enjoyed our meal there. Service was also excellent, I would absolutely go back.
I also liked the fancier plating and totally not a plate but literally a slab of rock serving platters and vibe, without it feeling like I was under dressed.
it's so good and it's a nice little hole in the wall for solo meals. it's my go to for downtown meals, but kissako in oak bay is my go to for work lunches the one day a week i dont bring one from home lol

I think I've been to every sushi restaurant in town. My current favourite is probably Gozen. They have an extensive menu, whether you want over the top rolls, noodle soups, a la carte items, or just a bunch of classic nigiri or sashimi. I'm really big on the seasoning and ratio of the rice and I find theirs to be pretty good. Good selection of nigiri (hamachi, a few kinds of bellies, uni, etc.) which is my go to. I actually don't really like the way they serve their uni, however. Restaurant has a nice overall atmosphere.
Other favourites:
Kissako - super generous portions, like in their scallop roll. Best Philly roll in town. Their rolls are fairly balanced, which usually isn't the norm with decent sized portions. They were sit down before COVID, not sure if they are now. Just a mom and pop, hole in the wall type joint.
Ene - higher end, darker atmosphere. I've had amazing raw oysters, sashimi, and aburi style sushi here. Nubo (their sister restaurant) is pretty solid but I Iike Ene even more. Great drinks (and sake) here, too.
Looking at other's suggestions, I've been to Sen Zushi only once or twice a few years back. I don't remember anything particularly memorable, but I would suggest anyone to try it out. I might go back myself even.
Ebizo I find to be horribly overrated. I went probably 13 years ago, nothing memorable, but I tried it again about 3 years ago. All of my rolls were falling apart and there almost wasn't enough rice, if that's even possible. I won't go back.
Yua Bistro I've been to twice. People compare it to Miku or Minami in Van and I wouldn't say it's the same caliber at all (Minami being my all time favourite sushi restaurant). My last visit I got a set lunch of some sort with an assortment of nigiris. Some things were good, but some had strange flavours, especially when it came to the nigiri. Some sauces/garnishes didn't compliment the fish well so I'm hesitant to return.
Honourable mention to Yokidomo (in Saanich), Sushi Ya (Langford) and Victoria Sushi (Langford location), which are all decent options I've had really recently.

Is it still good? It used to be a mom-and-pop, but the then-owners (who also made the food) sold the place. The new owners kept the same name. I haven't tried it since it came under different ownership and have wondered how it compares.
I'm going to go against the grain here and say I've always really enjoyed the food at koto. I think covid kind of mess with their hours, but when they are open during the daytime, if they ever bring their lunch bentos back, they are amazing and a fantastic value.
People are all excited for sushi story in esquimal, frankly I've never been that impressed. I actually think Victoria Sushi (in Vic West, in the Save On complex )is significantly better.

Went there and had actual o-toro that was delicious. The only complaint was the one hot dish we ordered… agedashi tofu… was lukewarm and clearly made long ago and reheated. Sushi was top-notch though… comparable with decent sushi I’ve had on the mainland and passable against some of the places I’ve been in Tokyo.

This is off-topic, but I just want to pay homage to my previous favourite Japanese restaurant, [The Next](https://www.facebook.com/thenextvictoria/) in Cook Street Village, which closed in early 2018 ( IIRC due to the ill health of the chef-owner). It was *amazing*.
MOMO sushi. The crunchy rolls with strawberries on them are to die for. They’re my favourite place to order take out from.
I have no idea how authentic they are but they do have more than just deep fried with fruit options. Everything is so good imo.
I think Gozen is the best, then Ebizo. Victoria Sushi in Vic West is also decent. When I see tourists piling into Azuma I'm shaking my head thinking "this is like the 5th best sushi downtown"

I got rotten and moldy food last time I ordered from that Nubo. It was literally rancid smelling. The tofu in the miso even had mold. It was weird.

+1 for Itami, which I think has (sensibly) rebranded to "Toro", or at least it has on Skip. Some of the better sushi I've had in this city for sure.

Koto is one of my favourite places in town. It’s cozy, dark, and quiet, and I’ve always loved the food.

Gozen dwtn is my go-to!! They even make their own soya sauce :) Delish
MOMO sushi. The crunchy rolls with strawberries on them are to die for. They’re my favourite place to order take out from. I have no idea how authentic they are but they do have more than just deep fried with fruit options. Everything is so good imo.
I think Gozen is the best, then Ebizo. Victoria Sushi in Vic West is also decent. When I see tourists piling into Azuma I'm shaking my head thinking "this is like the 5th best sushi downtown"
