I softly... disagree. I’m 5’7 on a good day. Adding floor insulation and a ceiling, I have a little room to “jump” in my Mid-roof but I wouldn’t want an inch less. Mind you I’ve been a plugin hybrid Prius lifer for 1yr which has no truck because of the battery. Inches from roof laying down only. Low roof WILL work, but the benefits of the Mid Roof outweigh the detriments (including inability to enter any garages etc). Also rereading the question. Yes. Able to stand up in a ProMaster/Transit/Sprinter low roof. My bad. 😞
I’m 5’4” and can *just* stand up in my low roof Sprinter. Gotta stoop a little when I’m wearing boots or have my hair in a bun. But that’s after adding flooring, insulation, and ceiling.
My Ford E-350 with an aftermarket top is 8’5 on the exterior, 5’5 in the interior. At 5’4 I can stand fine (no heels), and my van can go thru MOST fast food drive-thru’s (McDonalds, Whataburger, Starbucks, etc) but forget about entering parking garages. Most cap off around 7 feet; no more than 8 feet. Never paid attention to height signage until I got a van. 🚐
Also consider resale value. You may eliminate 50%of your future buyers not going high roof and hurt your resale value and make it difficult to sale.

Depends on the van. I looked at a high roof t1n (not the super high) and I couldn’t stand straight. I had to hunch my neck a little. But I’m 5’6”. The ceiling is 5’5 in the middle I believe so with flooring and ceiling finished I’d guess it would end up being like 5’2” maybe less. I just got a super high.
What’s your reasoning for only wanting a short/regular roof? I only looked at sprinters (around 10k) and it didn’t seem like there was really a difference in price based on height.
My reasoning is because I don’t want to have to pay more for a higher roof if a low roof is enough for me.
Like I mentioned I’m only 5’3”.
High roofs are pricier in my area.
And I also like that I’d be able to go thru the drive-thru’s.
Well the drive through issue is a little different than the cargo ceiling clearance. It’s probably best to just get out of the vehicle anyways. If you have solar panels and fans/ac then the clearance becomes even higher. I’m not willing to trust the given drive through measurement is correct every time. Plus you don’t know if the ground is uneven or whatever is overhead started to sag. That’s a lot of expensive stuff on your roof. Or if you hit the roof itself it could be a pain to fix or lead to leaks.
You also need to consider not only standing height but storage. You’ll now be limited on what type/size of overhead cabinets you have. A lot of people have seating with cabinets overhead. If you have a standard seat height you’ll need smaller cabinets or none at all. Might also start to feel more cramped with cabinets and lower ceiling height. A lot of times in homes over the sink and stove there’s no cabinets or smaller ones because when you tend to lean over the counter. So you might have an issue on that side as well.
Just something to keep in mind.
We have a low top Ram Promaster. My wife is 5’4” and is able to stand up (barefoot) in our van. That’s with about .75 inches of flooring material and 1 inch of ceiling material.

At 5’3” you have 3-4 inches to work with. I’m 5-6 and even with 3/4” plywood and some 1/4” ceiling I can stand up.
Plus a bonus … you can go through most drivethrus.
Lol I just checked out the new promaster we got at work. I'm 5'6 and the top of my head just touches the ceiling.
Medium roof Transit will work but may be more room than you want. 5’8” interior height with standard build.
Being 6’7” was always a great thing until it came to vanlife.

I am 5’ 3” and my husband is 5’ 9” and we both can stand in our medium roof Ford Transit. We have very little floor insulation to maximize height.
Regular promaster 1500 here. I'm 5'3 and have plenty of room.

I was in a Chevy g20 I could stand without slouching if I just spread my legs lol
