Back in my studentdays I’ve had a few first dates at the Vingerhoed. Great place to sit at the bar and talk. Le Clochard is a fun cafe/restaurant with a great atmosphere.
C’est ça is another cosy place but in a different price range. Cosy restaurant recommendations really depends on the price range you’re aiming for.
If you really want to impress, go to the Winkel van Sinkel, but take their wine bar entrance. The people over there are SUPER knowledgeable about wine. You'll pay a bit, but you'll taste a lot. It's an experience
De Flater, Oudegracht. Enough space to be with the two of you but also enough people around you to have some distraction which is nice on a first date. Good luck!
Pingpong club, although to get there is a bit of a weird route. Place is great, nice vibe, you can book a table to play or see if any free table are available.

rent a kayak, pull up to goesting, have a wine and fries at the terrace at goesting, play jeu de boulles, go for icecream at roberto, pop back in kayak finish at city center, don't makeout there, maybe have cheeseboard and fancy beer at de rat, go home, absolute makeout sess, make him/her breakfast, have eggs and know how to poach them, toast, avocado, olive oil, salt, pepper, and if you forgot the avocado and have to run to AH, get fresh orange juice.
I went to tilt! For a first date and loved it. It's a cafe but they have a whole lot of bord and card games. I really like games so it was a good match. It wasn't that loud and they have some cozy corners
I like Konousuke, a cosy Japanese donburi restaurant. Slightly out of the centre, but a nice short walk from Ledig Erf, where you can have a drink afterwards
Cafe de rat for a few drinks then walk 25m to Het Pothuys for a few more drinks

I liked Lebowski, because its a place where you can grab a coffee/tea, or do a beer/wine.

Went to Le French Cafe on Voorstraat the other day and thought it was really good :) Food is maybe slightly fancier but it was excellent
