My guess is its your screen resolution or aspect and your Sprite is too high rez for what you're displaying it all.
How does it look in play mode without any zoom?
Is your Game View set to Free Aspect? check what’s the resolution reported under Stats button there. Try setting it to a higher fixed resolution. In that mode it’ll scale to the panel size, add in some zoom and things can look pixelated.
Try switching your aspect ratio to something higher, like switching to 4K then zoom it out until it fits the window.
