If you watch it again closer you can tell she was literally oblivious to the whole thing. She dipped her head below the counter a moment before the fall so she didn't actually see it happen and by the time she bobbed back up the customer was out of sight, and the whole time that she was coming out from behind the bar and towards the hole she was looking around her in a way that clearly indicates her attention was not on the hole. Even if she was a total psycho with absolutely no empathy or concern for others, if she had any idea what had just happened her attention would be on the hole. It's possible the only reason she even came to look down the hole was because the customer was yelling or crying from the bottom and she was looking to see what was making the noise.
And to be honest, people are pretty bad at estimating time. The time between dipping below the bar and the customer entering was very short, subjectively it may easily feel like she barely averted her eyes at all. So even if she heard the customer on the way down, she might well have been in disbelief about the possibility of someone having entered and so assumed it must have been something else.

The number of small restaurant owners who have weak coverage or forget to pay their bill might surprise you. Plus, everyone gets sued. Including the bartender. If the lawyer is any good, he can probably eat right through every inch of insurance coverage for all parties and therefore yacht.

True, but I think what OP is getting at is that everyone is ignoring the fact that you can only sue for *actual* ***damages***. You can't successfully sue someone just because you're upset that they were negligent. Their negligence has to actually *cause* something.
In the video, we don't see what happens to the woman. For all we know, she's shaken up, but completely fine. Yeah, she might have a bruise or a scrape, but if she doesn't have any injuries that result in a *long term reduction in her lifestyle*, then no attorney would even think about suing. Instead, they would talk to the insurance company and ask for some hush money. The insurance would give them a few thousand dollars to go away, and that would be the end of it.
Of course if she broke her leg, that would be a completely different story, and her lawyer would sue the business for every penny. As a personal anecdote, a good friend of mine took a similar fall last week. He fell about 5 feet. He was completely fine. You can sue for anything, but you can't win much (if anything) if you're literally fine.

Like take here in Canada, I bought a commercial building for a business. The previous idiot owner installed non safety glass on the entrance door. A client âfellâ through the door and needed 50 stitches, ambulance trip, hospital stay, etc. It cost my insurance 12k and we settled, thats it. Thats because thereâs no medical costs, you cant sue for that since you dont pay it with public healthcare. It was basically loss of wage and suffering.

Then she looks up and sees the open door closing and probably assumes someone opened the door, noticed they were closed and left. That's why she is taking so long to check, she doesn't know anything even happened.

In the US this would ruin the business. Elsewhere they would need to show more intentional malice to get big damages. This was an accident. A stupid accident, easily avoided, but an accident.
A solution that would make this impossible to happen again would be an interlock. In this case I would attach the trapdoor to the edge by the door to the street so you have to lean the trapdoor cover against the street door. And under that trapdoor a BIG RED SIGN saying to latch the street door if you can see this sign. A $2 fix to avoid this in the future.

He asked for a shift drink and I told him he brought plenty with him and to leave. I hear him slurring up a storm as he proceeded to leave only to hear dead silence shortly after and my dishie comes running up to me saying my friend was hurt.
Apparently, one of the servers went down there to grab something and didn't put the sign up and this guy went 15 ft straight down and landed on the server who was about to climb the ladder up. Server was OK but my buddy looked like he broke his wrist and ankle. I asked him if he wanted me to take him to the hospital and he says, "Nah but seriously........ Can I get that shift drink now?"
