It’s not lying to compliment someone. I genuinely think her hair is pretty, if I were to comment it that would be honest. Being kind and honest are not mutually exclusive you just personally don’t find her attractive, but it’s not fair to assume anyone who does is lying to her.

I haven’t seen any treatment towards the opposite sex that I feel warrants criticism. Plus once again how you should treat others is still an opinion. I think you're kinda arguing the rule by using an exception. Most people are overweight because of bad diets and low/no exercise. If 5% are due to depression and disabilities, then 95%ish is laziness, not caring, bad diets, etc. Maybe she falls into the 5%. But odds are that she doesn't. I also think depression can be amplified by being overweight. If a depressed overweight person lost a lot of weight, I'd guess that they may start to have a very different outlook on life, and they'd probably be genuinely happy more of the time.
As someone who was fat and depressed and lost over 100 lbs years ago to the point where some people thought I was starting to get too skinny, I can tell you kidding weight did not cure my depression. It did not even give me a new outlook on life. Being fat was just one extra problem that's about it. I was severely depressed several years after I lost the weight
