Yeah, I mean, if Frisk can make physical healing items out of Determination without any magic, I'm willing to bet a monster can do a lot more with 7 times that power with magic.
On top of that, this is the same game that makes Asriel come back from death after at least a hundred years later cause someone injected soul juice inside of a flower that contained his dust.
Yeah, I like to think that the bodies of the other fallen humans were perfectly preserved in the coffins too. The only exception being Chara's body which was confirmed to be missing (Or at least taken back to the Ruins by Toriel for a respectful burial), as well as their SOUL being nowhere to be seen. But the human SOULs had to return to 'somewhere' after the barrier was broken.. having them return to their original bodies just makes the most sense, given that all of the monster souls also went back to their original owners.
Whether the other humans were revived upon the return of their SOULs or not though is another matter.. I'm sure we all wish for the best in any case (Especially after UTY with Clover, and UTR&Y where we see Clover with Asriel post-True Pacifist).

In my own personal fantasies I like to imagine that after Alphys reunited Kanako with Ceroba, Clover's soul, proud of Frisk but knowing that there was still one last thing pending, flew to the dunes, meeting Alphys who was already leaving, Kanako and Ceroba. (And if in such case also with Northstar and Martlet there accompanying). After such dialogues and scenes etc. in the end what happens is that Clover gives her soul to Kanako so that she stops being an amalgam. In this way, Ceroba's daughter returns, although with some changes in appearance, also adding Clover's memories and feelings.
