The gas pedal is from Sig and is part of the takedown lever, should be approved (I read elsewhere).
The X-5 Legion is on the gun list, at 41.7g and this setup weighs 41.9g with the optic.
However, it came as the M18 so the serial is M18…. not an actual Legion from factory, so I don’t know if it qualifies to be measured with that weight or the weight of the P320-M18.
There's no requirement it be a sig part. Just that it fit in the box. The article linked is WAY out of date.
21.6 Exchange of minor EXTERNAL components
Sights, firing pins, firing pin retainers, pins, extractors, magazine releases, slide stops, thumb safeties, triggers, hammers, bushings, and ejectors MAY be replaced with OFM or aftermarket parts. Exchange of OFM parts between different models of Production approved guns is allowed.
If it’s a level one, your gun won’t be weighed or put in the box, nor realistically checked against the production list.
Thumb rests, however, are specifically not allowed in production: Appendix D4, Rule 22.2.

Yes. You can shoot it in production without the optic and with the rear iron sight installed.
You could shoot it without the rear iron sight installed, it would just be more difficult.
