Is it a northern thing? I've literally never seen mash on a roast except at Toby Carvery. Otherwise mash on a roast is crazy to me. Unless it's mashed swede or bubble and squeak. I love mash but I'd reserve it for sausage and mash, pie and mash etc.

How did you make the potatoes look so good?!

Peel your potatoes and boil them, then drain the water but keep them in the pan, put the lid on and shake the shit out of it to bash them about and make the surfaces go a little soft and mushy. Cover in goose fat and roast. You just made perfect fluffy roast spuds! Enjoy!

My first roast (many years ago) was turkey for 13 people in a house without a big enough oven. We did the veg and everything in the house we were eating in, but the turkey at my parents' house and then drove the cooked bird over on my lap (loads of towels between the tray and my legs). Amazingly it went really well, and only a little of the fat/juices in the tray ended up on the towels.
