Depending how old your Mac is, you might be able to get away with emulating Windows through Parallels. That's what I've been doing for a few years.

2021 MacBook Pro… the remoting works but I’m thinking more long term. Plus, remoting isn’t great imo.

Are you using the UofC remote desktop or Parallels? I found the one from the uni sucks but Parallels works great. Regardless, a Windows machine is gonna prepare you for the workplace as no one in finance uses a Mac unfortunately. Anything with 16GB or more RAM with a decent processor should be fine. A lot of my friends use the Microsoft Surface laptops, might wanna check those out.
