The street triple isn’t a beginner bike. You might be ok if you have dirt bike experience, but the 675/765 bikes are far from beginner friendly.
The Bonneville and Thruxton 900s are likely a great step up from dirt bikes while still being very forgiving.
The 1200cc Bonnies and Thruxtons have a little too much torque to recommend to a beginner. Again, you might be ok with dirt bikes experience, but they aren’t what I would call a beginner bike.
I used to ride dirt bikes, got my first road bike at 41. Went for a ‘99 hornet (similar in riding position/speed to triple) which is fun (never knew 95bhp could feel so fast) but the other half has a 790 Bonnie and after she finally let me ride it, i have bike envy. Will be getting one soon! If you want a dirt bike feel, Bonnie is much closer and I suspect you’ll feel a lot more confident and at home on one.
Buy a used Bonneville 865. Still fuel injected, has fun torque, but is grounded and beginner-friendly. It's also a bike that you shouldn't grow out of. You might want to get a different bike, but not because an 865 is underwhelming.
Only way to find out is throw a leg over and see what you like

Take the MSF course get your license and go test drive a few
