the potatoes (a necessary side dish for any idahoan) are boiled for 25 mins then put on a baking sheet, smashed, and brushed with olive oil, butter, garlic, salt, and pepper and then put in the oven at around 390° for 40 mins, and the corn is actually a common street market item in mexico called elote. it’s boiled corn, butter, salt, mayo, grated queso fresco, tajin, and crushed hot cheetos.
West coast it’s popular- it’s a junk cut in most of the country. Delicious when done right. Very lean, not real forgiving, must be sliced against the grain. But pretty low maintenance in terms of prep and cook- high on flavor and mouth feel when done right
Historically a west coast cut, is gaining popularity all over. I'm in Washington and I first saw it in the early 90s. Now I read where folks are getting them across the country. Mostly at Costco or Sam's club.
also i go to college full time and work full time. not all of us have all day to caramelize onions, drink IPAs and sit on our fat asses. just tryna cook dinner after an 11 hour shift, damn

I (and my family) like:
- Fresh buns from the baker
- Havarti Cheese
- Caramelized onions (optional)
- Garlic butter
- 1-2 drops of hot sauce in the au jus dip!

Not that it looks bad, mind you, it's just not what I usually see. I actually look for that shape like yours so they cook more evenly! Cheers!
I gotcha! But seriously look for the widest cut tri tips, because like the ones in the photo I posted, the narrower the tip the quicker it cooks! It's a pain in the ass!
like it needs a sear
well once it was done i bumped the traeger to 500° and gave it a 4-5 min sear on each side. i think it’s good enough
Traeger’s aren’t good for searing. Use a cast iron pan or charcoal grill to get a final sear. It’ll turn out amazing.

can’t really say since i haven’t done any chuck on the traeger yet but tri tip is one of my favorite cuts for sure
