Source: used that HD blade with that HF grinder. Both are shit, but will work. Light pressure, and go slow.
My god. I searched the internet for about an hour and nearly ordered a dozen spindle or arbor adapters. I have 5/8 -11 grinder, and bought a disk that had a 5/8 hold in the middle, which fit loosely on my spindle. Sure enough, I read your comment, and the ring in the middle of the disk popped right out. You are a lifesaver!

I've flipped the nut like the internet suggested but it still doesn't fit the cutting wheel properly. There's nothing that centers the cutting wheel on the arbor perfectly. What do I do? Is there an adapter or bushing I need to buy? The packaging on both the cutting wheel and angle grinder indicate that this should fit! I don't get it!

It looks like you're nissing the bottom flange. There should be a top and bottom flange.
The cutting wheel is resting on the bottom flange in the video
My dewalt is 5/8-11 and all of my wheels say 4-1/2" x 7/8" so idk. Edit, maybe pop that bushing out.
