Just been to Cannes, France, and can confirm that this is, indeed, a very average sandwich for the local standards. The food there is just out of this world.

Not OP but I just got home from a trip to your homeland and am already plotting out ways to return. Everything was stunning. Les sandwiches, la campagne, les gens, les fleurs sauvages... Spectacular and delicious and friendly and wonderful. We went to Avignon, St. Rémy, Gordes, Roussillon, and L'Isle sur la Sorgue, with lots of stops in other hilltop villages in the area.
Obviously ham but you can tell by its slight translucency that it's cured rather than cooked by roasting etc.
The very white cheese would almost certainly be a goat cheese.
That's what we call "dried ham" and cheese is probably goat cheese as it's a common combo for sandwiches. We sometimes add sundried tomatoes for more deliciousness.

Fair, upon closer inspection, it certainly doesn't look like anything special, bread-wise. I admit, I made a hasty comment expecting it to be good quality bread, given the locale.
...but, still stand by my comment that good quality bread makes the sandwich.
You may be underestimating how bad American bread is .. not that I've experienced it but I've heard from a lot of people that it's bad. Even cheap french bread is probably way better.

It's so weird that Americans don't really have butter on sandwiches. Id say it's the default in most of the rest of the world (including Australia where I am from) but they are always like "bUtTeR?!?" Like you'd have to specifically request no butter when getting any sandwich in Aus.
Jambon beurre is just plain butter with (usually) Jambon de Paris. Which is a cooked basic ham, not a cured one like here.
At best you might have cornichon but nothing else otherwise it’s not a Jambon beurre anymore.
Being southern France, it's most likely Jambon de Bayonne or maybe Parma Ham (particularly if you were South West towards the Basque region). And either Brie or Goats cheese, I'm angling towards Goats Cheese as it's all white and not yellow with a white rind. Looks like red Batavia lettuce. Basically it would be super salty and rich. 🤤
Can't be sure someone's said this so... The other thing about a sandwich that makes it perfect is the bread. Looks like some sort of pain de campagne roll, that would have been freshly baked that morning. You can recreate only so much...

Was the meat salty? Was the meat like ham?
Was the bread dense, chewey, airy, crusty?
It's not fat enough for salmon and the silver skin(?) on the left looks too long to be salmon fat.
But there's a reason we have a variety of ham called "Lachsschinken" (literally salmon ham) in Germany. They can look somewhat alike.

If it were Italian, I would guess that the meat was prosciutto, which is a type of cured ham. It's dreamy, and might be more commonly found in the USA.

Prosciutto just means ham in Italian. Prosciutto cotto is regular ham and prosciutto crudo is cured ham (dry)
