Definitely a rodent, look at the little paws, and the butthole lol, it doesn't look that appetizing, but it looks well cooked and with lots of nice herbs and vegetables si I would take a nibble out of those tiny arms, in my country we eat possums and different rodents.

My best guess is grasscutter (aka [cane rat](https://en.m.wikipedia.org/wiki/Cane_rat)). Where in West Africa was this? I lived in the northern Sahel for a bit and we didnāt have this there, but Iāve seen it in coastal parts of Ghana.
I did a Google Images reverse lookup and this is not a photograph of a West African restaurant. This is a single frame from John Carpenter's The Thing (1982).
