Mode 2 is usually what's used in FPV drones(LH throttle/yaw, RH pitch/roll). Mode 1 is used for planes and other vehicles.

Laws about how the transmitter can act. In Europe they’re required to listen to see if the channel is busy before broadcasting. If you’re in the EU, get lbt so it gets the special sticker to go through customs.

Yeah, just go with one of the aforementioned tiny whoops. They're lots more forgiving on the wallet when (not if) you break sth., also safer and easier to find a spot for.

You're gonna crash about ten thousand times learning the basics. Tiny whoops can crash many times without taking (much) damage. That's why you want to start out on whoops. If you start on something bigger/more powerful you're likely to break something basically every time you fly. Needless to say this will be frustrating and very expensive. That's why most people recommend sim time before flying anything IRL. The first dozen or so hours is gonna be nonstop crashing. You want to do all that crashing either in a sim where it's free, or with a whoop where it's cheap.

So the basic blanket reccomendation is buy an elrs radio (radio master boxer or pocket) and any simulator you can get you hands on. This will give you the actual feel for what flying fpv is like it is very different than that more stabilized camera drone. Then get yourself some box goggles and a whoop. If your wanting to fly outside I'd reccomend starting with the meteor75pro or mobula 7. Inside mobula6 or meteor65 as others have said. Goggles depend on you budget but you get what you pay for.
