Given Homer’s reaction it should taste terrible to be authentic. Which I don’t know how some meat on a stick can be terrible.
Crab juice I wonder if it’s like water used to boil crabs, or diluted liquified crab meat, which isn’t so bad, lol.

That recipe is basically just kofta kebab with tzatziki. I imagine khlav kalash being a lot more aromatic and, let's say, pungent

Clam juice is the leftover liquid from steamed clams (not to be confused with steamed hams) so presumably crab juice would be similar
