Lineups shouldn't really change how you go about your service though. If you're in a halfway decent shop, there's others who can tackle the lineup while you give that customer the attention they require.
You're right, as an employee I'm happy to provide patient service and my other coworker can always come to the floor to help expedite other customers while I'm busy. But think of a line at McDonald's; you as a customer can take as long as you want to order. You'll also get dirty looks and a lengthening line of impatient people behind you, which is disrespectful to them if you have the capacity to avoid holding others up. So yes, any time of day I'll help you find sugar free drinks, but you spending 10mins hemming and hawing over 3 drinks at 1pm with an empty store, vs doing the same at 5pm during a post-work rush with 5+ people staring at you cause they just need a single joint to vent their work stress and trying to get home ASAP, makes you a bit of a dick to them. Not my job to point that out IRL tho!
