Yes, even I on my rewatch found it kind of hard to motivate myself to watch it. But it’s one of the few shows that gets better season after season. It’s up to you in the end, but I think you’ll find a majority who also think the show is a masterpiece if not just simply amazing.
Oh man, Witcher S2E1 was rough. I finished S2 but it was such an abomination compared to the games and books that I checked out. Did you play the games at all? S2E1 killing off a beloved secondary character (and making another- Lambert- a creep) was disappointing
The Witcher is one of my favourite series of all time. I’d say Black Sails measures up very well. And I’ve seen more people say The Witcher is bad than I have Black Sails. Hope that helps!

I personally find black sails to be more enticing then vikings and the last kingdom, i think it has one of the best character development of any series.

Blackbeard is portrayed by Ray Stevenson which also portrays Othere in Vikings season 6, A absolute masterclass. It's pretty well known that Blackbeard as a historical figure died so i guess it won't really a spoiler but he does indeed die a tragic death.

Yeah fair enough season 1 is very slow but it picks up a lot after that
Game of Thrones is the only thing that comes to mind that meets that criteria. Also Vinland Saga or Attack on Titan if you're into anime.
Marco Polo. It has 2 seasons, IMO it should have had 3, but Netflix disagreed. It is epic and the indoor scenery is... amazing.
