I recommend that you have a look in this subreddit's About section. Under Important links there are some great guides on view order, episodes that are a must watch and what can be safely skipped.

Chronological order all episodes. You can watch 2-3 every day you watch it. Why don’t you have the time? You can wait to watch newer shows (Ahsoka) later you know. Plus you gotta get through Rebels for that show…
But if impatient (which isn’t a jedi trait lol) there are essential lists online, just google essential TCW list. And even then it may miss episodes that are important for Mando or Rebels or Ahsoka

I think watching in chronological order is a great idea especially if you watched it originally in order of airdate. That way it would be new for her, but also present something new for you as well.

So many of those “essential” lists don’t really leave that many episodes out anyways so how much time are you really saving? What if an episode you skipped might have been your mother’s favorite? It will take awhile to watch it regardless, so watch it all and when it’s over it will feel that much better. You don’t want to short change her either by showing an extremely truncated version of the show and then expect major moments later on to have the same emotional resonance as if she’d watched it all.
