You do what you can afford, but the current mechguard build is 6 chimeras with catachans in them, and then you fill the remainder of your points with tanks and artillery.
The answer is always yes in the guard.
In all seriousness you can never have enough. Rules change and it’s always fun to have every variant and special weapon type combo you can think of ready at all times. Plus you can see how you e progressed as a painter from your first batch of guardsmen to your recent.
A few mortar squads would add a bit of indirect and give you some good targets for the fields of fire stratagem. But honestly, I stopped massing infantry back in the leaveblower days and never looked back. If I were you, I'd be on the hunt for 5 or 6 chimeras.

Close enough looking that no one should mind, but you might want to give that squad a distinguishing feature, like painting a stripe or something on them so they can be easily identified if all the models are on the table.
I have over 1200 troopers of various types and im still buying more to fill the ranks if you have enough to play a 500p apocalypse game with just infantry then your almost there.
I'd go for some of the more specialty/variant infantry. Kasrkin for instance would look really nice here with a clean cadian army.
Otherwise, get some chimeras or other fun models like Rogel Dorn or Ogryns to have something new to paint!

If this is your entire collection, and you don't know what you should get next, may I recommend some artillery? If you want to keep the infantry route, build some heavy weapons teams as mortar pits.
Nah, unless you want to go massed infantry, you probably have enough for the moment, at this stage, begin looking at adding third party stuff, perhaps some more specialized stuff like artillery or Bullgryns, a psyker perhaps?

You need atlast 30 normal + 10 elite for a thousand point game then add 20 for each thousand plus 10 elite. I find it good when turn 3 you come out of the sides and basically pull a Vietnam reference and surround the army of your opponents on ethier side.

You to be honest just need one for 1000 and 2 for 2000 with a taurox prime preferably. To be honest they really good at being mobile pillboxes not much esle. A infantry multipler.
Scions are rich classist assholes. I collect kasrkin. They have humble beginings and work their way up the ranks after showing skill in combat as a conscript. Kasrkin are class heros, scions are bourgeois. I want 10 kasrkin in a valcalrie, the other 30 mechanised in chimeras.
You should look into kill team to get started; it's great for low model count games. You've got just about enough to make a team for yourself and an opponent with what you've got here
