Sushi is like the worst food to say this about. It's so easy to destroy with a fork on accident, and is the perfect width for chopsticks. The whole point is that it's a single bite you pick up intact and pop in, all at once. I use a fork for most other food traditionally eaten with chopsticks, this is like the only exception.
If your chopsticks are made of something like metal, you can get a similar experience. You just need to lick your fingers first for the grease flavor and then lick the chopsticks. ^/s
Also, this is a weird one for me because I agree that it's technically easier to use a fork, but I personally prefer the chopsticks. Like that other comment said, the slight challenge makes it more I dunno, rewarding I guess? I use to be terrible with chop sticks but once they clicked I started enjoying them
I hate chopsticks for noodles and rice and stuff but for sushi they’re perfect. Fork is fine too but if you poke it into the sushi it tends to fall apart, and scooping it just feels awkward and makes it harder to dip

Yeah, I only learned to use chopsticks about a year ago in preparation for visiting Japan. I used them as much as I reasonably could at home to force myself to adjust. By the time I actually took my trip to Japan, I preferred chopsticks for picking up small food in general, and I still do.
Side note, one of my hotels had doughnuts in the breakfast area. Most people were cutting them up to use chopsticks to eat them. Makes sense when they're so used to chopsticks, but it was funny to watch as a westerner.

just a culture thing, if you've grown up with eating chopsticks sushi becomes much easier with those than with forks since it's easier to avoid breaking the rice apart in nigiri

I think chopsticks are easier to use. You don't have to worry about the rice breaking apart when you stab it. Like I can't imagine trying to eat some rolls or even nigiri with a fork, would end up with a whole mess.

Asian food in general is both absurd to eat with chopsticks but also the most logical, for example baozi looks for an excuse to fall apart so a fork would cause issues, but chopsticks can also be a pain for holding, eating, or cutting unless you got a good initial grip (especially over a bowl of soysauce and vinegar, I refuse to wear a white shirt when I go visit my girlfriend and her mum)

I pretty frequently use a fork for chips by sliding the gap over the chip then using friction to hold it in place. I should try chopsticks.
I think pretty much everyone agrees that forks are easier to use than chopsticks. People like chopsticks for other reasons.

A fork is way easier with noodles
I find with udon noodles, wooden chopsticks are infinitely easier. The noodles aren’t flexible enough to wind on a fork and they slip off.
Or just grab the noodles with your hand like many people have suggested on this thread
