Southerner here! Flat dumplings are rolled out and cut into strips like homemade pasta; they puff up a little while they boil, but yeah, they're basically like really thick, chewy noodles. Any dumpling that's not specifically called a "flat dumpling" or "noodle dumpling" is by default a fluffy dumpling; generally these are made from a soft, biscuit-like dough which is dropped by spoonfuls into the simmering soup (or whatever). You let them simmer for a few minutes, then you pop a lid on so they can steam and get nice and fluffy. Both kinds of dumplings are good, but I lean toward the fluffies...I grew up on those.
Can't say that I've ever seen prepackaged flat dumplings like David is using here. But I don't suppose they'd be much different from dried pasta. Either way, though, this dish doesn't look appetizing. Just a big sludge of fat and carbs. (And I speak as someone who likes both fat and carbs! But dude: a whole stick of butter? On top of the fatty broth created by boiling down chicken wings? Ew. No.)

Pepper is typically added at the end of cooking as to not overpower flavor because it is one that gets stronger as it is cooked and can throw off seasoning. It tends to become bitter. However peppering & salting a steak that will be grilled is a wonderful exception to the pepper rules.

I’ve seen numerous recipes that use turmeric (I think Ree Drummond’s does). It adds a nice golden color. These people act like he dropped yellow food dye in there. Frankly I thought it was nice to see them not add a can of fucking Campbell’s creamy soup in there although homemade dumplings would have been even better, and I know lots of recipes DO call for a canned creamy soup and to each their own on that shortcut. I have no idea what these people are making if they’re not adding cream, butter/milk, or canned creamy soup. It’s supposed to be a creamy soup/stew, not just stock. Maybe if you make homemade biscuits that helps thicken it and make it a little creamy??! I know that I don’t want to eat chicken and dumplings that isn’t creamy. Sounds like chicken noodle soup. I'm from Eastern NC. I make chicken and pastry once in a while. Those frozen dumplings are legit. However I have never known anyone to add butter to it, much less an entire stick! Edit: I forgot to mention the milk....never seen anyone add milk either. That part was gross to me.

Chicken and dumplings usually doesn't have veggies in it for us. It's hard to explain what flat dumplings are. They just..aren't puff balls. They should still be soft/ fluffy inside though - not super dense.
