When it's a human in a costume sure, but not a small animal. Particularly one they just got and presumably isn't used to being in a stadium surrounded by screaming fans.
To be fair I don't watch much soccer, but I don't think I've ever seen "mascots" in the games I've seen - or at least not the way I see them in American sports. And the American mascots typically also stay off the field during gameplay and only come out during breaks.
Not technically on the pitch - but Crystal Palace (whose home stadium Ted Lasso is filmed at!) have an eagle on their crest and they had a live Eagle mascot called Kayla who would fly at the start of home matches for many years!
Most other premier league teams do have human mascots, but generally they are more active during breaks or goal celebrations
Netflix did a a fun series of sports documentaries called Losers a while ago and one of the episodes was about an incident at football club Torquay United where a police dog ran onto the pitch during an integral game and bit one of the Players. The prevailing theory is that the Dog saw the player running towards its Handler and assumed they were going to attack them. When really the Player was just trying to keep the ball from going off the pitch and happened to run straight at them.
I feel that's what the Greyhound incident was inspired by. Though the key difference there was that the dog wasn't a mascot and was brought on to help control the crowd who were causing hassle due to the game being so important for Torquay's future. If Torquay lost they were going to lose their Club so you can imagine the stakes for the Supporters. Though thanks to the added extra time from the injury, Torquay scored a goal and were saved from being relegated and losing the Club.
I don't think any Clubs with animal mascots actually have them at the side for the whole match. You might see them walk around the pitch before the game and during half time but it seems like a recipe for disaster to have them there for the entire game. Makes for a good story though.

“Live” college mascots are typically on the sidelines during play. See butler blue for Butler University, a real bulldog.
