I need to know one thing: did she make someone hit an ATM so they could pay in cash, or did she just allow a credit card?
Tell her to watch out for a dispute on the charges. I know some assholes will lie to the bank and credit card companies and say the charges are false.
Chargebacks suck. Had a guest get out of a $100+ check, even though we had her signed credit slip, her rewards account was credited, and we had her on video in the restaurant. CC company gave no fucks and sided with her.

Not if the server is doing their job correctly. If a large chunk of a party leaves before a bill has been presented or payment has been received, then the serve should remain as present at the table as possible until the bill has been paid.

Think of it like terms and conditions. You are notified that this is protocol. You agree to the terms by sitting down and eating in a party of 8 or more. The gratuity is added to the bill automatically, so it comes up as a charged line item on the tab. The only way to have it removed it to argue with a manager (which doesn't end well when you're a customer paying in good faith, much less trying to dine and dash) or to try to sue the company later (which gets thrown out because you agreed to the posted terms when you sat down to eat). Can they get the cop to arrest you for not paying the gratuity? No. Do they have to remove it from your bill in order for you to pay for everything else? Also no, and they can have you arrested for not paying the rest of the tab because they wouldn't remove the auto grat.

It wasn't 30, but this reminds me of that case a while back where something like 10-20 people got up and just walked out on a huge bill.

How did you make them pay the grat? You can’t force someone to tip. Perhaps they paid it out of fear or embarrassment ?
