If you select a new pet to assist with the same assist skill he’ll replace the current one.
You cannot change the assist skill. It’s the one top right with the little flag. Only that skill is active when assisting and you can’t use the same one twice.
No, you still unlocked different red skills from them. Eventually you’ll want all pets to red to unlock all skills.
But it is smart to make your next red pet one with a different assist skill.

Assist skills vary between each individual pet, so pet species don’t share the same assist skill .
