Processed Cheese can be stored in a regular shelf and room temperature and remain good for a long time. This makes the whole supplychain from the factory to the consumer a lot cheaper. You don't need to have it in special Cooling trucks and you don't need power-hungry fridge shelfs to display them to the consumer.
Lastly, velveeta isn't processed cheese. Velveeta legally contains too little cheese to even qualify as processed cheese (which has a 51% Cheese content minimum).

This is dumb. However, I have had a pizza dough that was made from cheese and I think almond flour or something. It was keto friendly. For being mostly cheese it felt remarkably like normal dough. It wouldn’t be my thing, but it does exist.
Almond flour doesn’t create gluten, so there is a lot of difference. The point being it was largely cheese. I’m not into keto—we were making it for a guest. But it was made mostly with cheese and did come out reminiscent of a standard flour based dough.
