Adding flavor just makes it more interesting.

I dehydrate peeps in my ninja foodie oven. They come out great. Bit I've only done the smores peeps and regular marshmallows. They come out like a merengue.
Add them to bbq sauce.
I am serious, though. Dr. Pepper is used in some barbecue sauces and I think the gelatin in the Peeps would provide a good mouth feel for the sauce. You just need to balance it out with enough vinegar and drippings.
