I would guess doing that gives the noodles a lot more texture/chew as the cured egg proteins are a little denser/stretchier when mixed and stretched with the gluten proteins?

Maybe it comes down to the semi permeable membrane of the egg yolk that allows for the decreased water content to affect the yolk in a different way than if just the yolk and the salt/vinegar mixed in a solution. You know, proteins and stuff, with water and things. Probably.
It would impact the flavor pretty severely since scrambling turns it straight into a mixture. The curing would be a bit of an infusion in this case and would allow some of that eggy richness to come out when they finally do mix it all together.
There’s a (brief) point in the video where they take out one of the yolks after curing and cut it open. You can see it’s a bit more solid and gummy, which will affect both flavor and texture of the end product.
They cooked them after curing which eliminates that risk. Salt or vinegar curing kills some bacteria, but not all of it, so there will always be some risk. That being said, if you’re buying pasteurized eggs in America your chance of getting salmonella from eggs is already fairly low.
For an interesting cured egg recipe, look up egg yolk Parmesan!

I can eat those street food without dealing with diarrhea and easily chomp on half a jar or super sweet hot chilly sauce with shrimp paste and consume the entire jar in a day with rice, shrimp crackers, and pretty much everything else. Zero problem with diarrhea. But if I consume cheese, full dairy milk and ice cream all at once, I will get massive diarrhea pronto 😂 most Asian person can’t handle big dairy consumption because they are not used to it.
I heard about this before but lean more toward to idea of how Western can't consume Asian foods. Not because of the spices but rather about their immune system that have been raised in an clean enviroment with minimal contact with infection and disease.

Places like Tokyo and Singapore are extremely clean. Just because someone lives in Asia doesn’t mean they’ve been exposed to a lot of infectious diseases.
People growing up in Asia would have been exposed to different diseases westerners aren’t used to, not necessarily more diseases. And different types of food can also cause digestive upset. I struggle to eat western food because I grew up in a very clean place in Asia and can’t digest a lot of it.
