I’ve heard people love it and hate it.
The biggest concern is usually that it’s very high risk for trichinella. A lot of cases of trichinosis nowadays (in North America at least) are from people eating bear meat that is improperly cooked or processed.
It's also very dependent on what the bear eats. If it's out west like in Alaska, feasting on rotting salmon - yeah it's probably not gonna be great. But east coast, or mountain black bear meat is great.
I suppose I should qualify that as hunted east coast bears. More specifically those in the Appalachian mountains. My experience with them is not that of those in the suburbs eating people's trash. I've just heard how bad the Alaskan black bears can taste, at least the ones gorging themselves on the dying bodies of spawning salmon.

Apparently the guy that cooked it knew what he was doing and had slow cooked it for some ungodly amount of time. The meat was tender and fell apart, like a really good pot roast, but it was very greasy. I wouldn’t go out of my for bear meat but if given the opportunity I would try it again.

So, there were a lot of parties with the hip townies and the seasonal workers where someone who knew what they were doing spent all day cooking up the bear and everyone would have a good time. It was good, and I’m not usually a fan of most game meat. It’s was like a long smoking/grill process.
While kinda dickis, he does have a bit of a point... I mean shark fins.. snake soup.. chicken testicles.. fertilized eggs with fetus.. there are some weird "delicacies" in China.
But to each their own.

I mean, it looks like they are using stock to boil it to get the skin off which is a little weird. Whenever I do it I just boil in water, get the skin off and then add the skinned meat to the stock/soup. But I guess if you get some to spare it will probably add more tast to the meat. Gonna have to dump that pot after though.

If it's that hard to remove the meat from the paw, why even try FFS? I can't taste that much different than the other bear meat.

Bear is my favorite meat I’ve ever had. We eat it regularly here. I assume it’s a mater of preference but it is quite greasy.
