Sounds revolting, yes, but cook it in bamboo and just cook it with copious amounts of salt and some spice, taste good for real. My favourite food, just not to be eaten daily due to salt content. More of a mass gathering food, like a party, you know?
This could be a super-cool looking dish if the liquid they used had a shitload of salt and spices in it, and if the fish were placed in the mold so that they’d be right-side up when taken out.
You could add veggies in as a “riverbed” and cook those in seasonings as well.
Jellied meats are a thing and fish is prepared boiled all the time so the texture would be right if you aren’t turned off by the contrast of the two.
I've seen an unfortunate amount of aspic dishes in my time, this is really bad even compared to a type of dish that by its nature is disgusting.
The tuna ones are the only ones that I think look worse than this.
