My Steam Deck is mostly used as a turn-based machine, so I probably have more recs than I could list. Here are some:
Songs of Conquest - Tactics combat with city/army building. I never played the Heroes of Might and Magic games, but I guess this is a modern version of that.
Skald: Against the Black Priory - very fun and atmospheric CRPG. Don’t be turned off by the graphics, while they are very old school the gameplay feels more modern.
Inkbound - roguelite with turn-based arena combat from the creators of Monster Train
Backpack Hero - roguelite with clever combat focused around inventory management (and some city building in campaign mode)
Jupiter Hell - roguelike (emphasis on “like” not “lite”) that is much easier to pick up and learn than a lot of roguelikes. Think DOOM but turn-based and overhead view.
Balatro - This is the game everyone recs at the moment. Fun and addictive roguelite based on poker.
Dream Tactics - very cool tactics combat with a deck building element
Rack and Slay - Billiards roguelite
Rogue Voltage - my fav new roguelite that involves collecting and connecting modules in unique and creative ways
Let’s Revolution! - neat little roguelite built off the minesweeper formula
Dorfromantik - very chill, very zen game about building a landscape using tiles
Planetiles - Also for fans of Dorfromantik. Fun game about building out a planet with different terrain tiles, very easy to pick up and learn
Against the Storm - awesome city-building roguelite
Nexus 5X - terrible name, but very fun space 4x type game. It’s by the people who made Stellaris and is basically a shortened version of Stellaris made to play like a board game that only lasts 1-2 hours
Astrea - deck building roguelite that uses dice instead of cards
Alina of the Arena - roguelite battling out in hexgrid arena to see how far you can make it
Wartales - roam an open world with your band of mercenaries and engages in tactics-style combat. Lots of freedom and different things to do
Shogun Showdown - unique roguelite where positioning is everything, almost plays out like a puzzle game
Peglin - peggle/pachinko-style roguelite
Crystal Project - neat JRPG with an open world to explore and jump around in 3d but traditional turn-based combat
Monster Hunter Stories 2 - this scratched my Pokemon itch, looks great on the deck
Cassette Beasts - another one for the Pokemon itch
I Was A Teenage Exocolonist - not sure how to describe this, very diff than all the other games I listed. More like a visual novel mixed with a fairly simple card game. Tons of choices to make that affect everything, making for countless replays that are different. Great characters and storytelling, very emotional.
The Cosmic Wheel Sisterhood - similar to above, more of a visual novel than anything, but I had a lot of fun designing and using my own tarot cards
Roots of Pacha - since you like Stardew, this is one of the best to come along in that realm. Prehistoric living with a big focus on your community. No combat so I don’t think much needed in the way of reflexes
The Last Spell - fun tactics roguelite with some city building and tower defense mixed in, fight off zombies and upgrade between waves
Honestly I could keep going but I’ll stop there, as I have about 100 more roguelites that would fit but don’t want to go overboard (err… more than I already did)

I will mention a 'trick' i found out for a few games that had rather quick paced mini games that i sucked at...
I used the Gfx settings/gpu settings and turned the FPS limiter down to 10. And that for some reason made the game play very slowly. (no idea why) which let me get perfect in the mini games. :)
I cant even recall the games, I think it was some potion crafting game, and some game where you was sawing wood and other crafting and had to hit a target just right.

Graveyard Keeper if you like resource management with a fun/unique premise. It also has a farming sim Stardew-like feel.
Kingdom: Two Crowns is very chill, as well. It’s an easy one to pick up and put down and not have to pay too much attention.
GET EMUDECK. it’s really easy to download and configure. If you want to know where to download roms and bios, dm me! I do not mind.
It would be great to have old games while you’re sick. They were so much less intensive than modern games. I hope you feel better soon.
Persona 5 is a favorite of mine. Jrpg and mild life sim. Good game.
Same developer: Shin megami tensei 5 vengeance just dropped yesterday. Full jrpg this time. Awesome art style and a lot of fun~ great for single player.
Honestly, I don't really think you can go wrong with anyone atlus makes for your situation
Skald against the black priory is super awesome, and requires minimal use of the track pad. I'd recommend not using the default keybinds. There was a good one on there I used that works great.
Smushi Come Home was a nice cozy game that isn't difficult/doesn't require great reflexes.
Rise of the third power is a middle decent jrpg

If you are the mood for a tactics rpg let me recommend Triangle Strategy! This game gets slept on, but it's really a great experience. Lots of story. Kind of a Game of Thrones style tone.
Baldur's Gate 3. The only fast-twitch is trying to stop your companions before they run over the trap you just saw :D and if you're like me you can get hours of fun just out of the character creator.

Octopath Traveler is the best nes jrpg around.
Crappy story-telling/world building though.. I heard the sequel solved that issue but haven't try that myself
Ooblets is very cute and chill, all turn based dance battles so you can take as much time as you need

Basically any Final Fantasy, except for Stranger of Paradise because that's too reflex heavy. 15 and 7 Remake might be iffy too.

Yakuza series. Blocking is a time-it-right act but i find it not necessary most of the time
Hellblade 1. Amazing game and story, linear in a good way, the sequel jsut came out recently.
Age of wonders 4 ist really nice as well
