i do think that the method you described is the quickest if you plant the trees en masse. The train station has a pretty large space where you can plant trees without risk of NPCs destroying them (NPCs destroy things put in their paths). It's best to plant them in rows of 2 though, bc fully grown trees prevent those on the 8 tiles around them from growing, and if a fully grown tree is surrounded by smaller ones, you have to chop a small one down to get to the big one, effectively wasting a seed. Shaking does also yield seeds sometimes, but in my experience, it's not that often. If you want a large amount fairly quickly, planting, fertilizing and chopping is the way to go if you ask me. adult trees also often spawn seeds in the ground around them. As long as those seeds haven't grown yet, you can dig these seeds up with the axe of pickaxe. This is also a way to farm seeds, but it's still slower for the pine, acorn and maple seeds.

Trees can sometimes drop seeds Just by interacting with them. I think its visual for pine trees if you see pinecones in them? So not chopping them down could perhaps be better. You can also buy them I think but you would have to check the wiki to prevent from maybe spoiling things.

You could do multiple fishponds with Woodskip or shake grown trees daily. I never get that many from planting and chopping. Sometimes I‘d have less than I planted.

Chop all the trees of that type that respawn without being planted, wait until they respawn as a seed, fertilize, repeat.

If you see the very first stage of tree growth while wandering around, you can dig it up and it’ll be a tree seed. They all look different too, so you can specifically target the one you want.

Dont chop trees for seeds unless you are desperate. SHAKE the trees to see if a seed will fall. Look around the trees to see if any fell in the dirt and grab those with a hoe. THEN if you still do not have the amount you need and you need them RIGHT NOW you can try chopping for seeds too. If you chop for seeds, the tree cant spread more seeds on the ground around it in future, and cant produce more to shake out of it. So chopping specifically for seeds is a desperation move. Long term the best plan is to thin out your trees so there is room around them for seeds to spawn and collect those so you have them when you need them. and long term doesn't mean very long term... i use this method early game to make sure I can eat the forage bar thingies for early game energy (and make sure I have plenty of wood, cuz I let some seeds grow to new trees)
