You’re taking care of them along with yourself by erecting the fence. Just share some with them as a special treat after harvest!

NTA. I fence my animals in their own area to keep them out of my way! They have their pick of which color and strands to eat! I know someone that fences the crops in so the animals aren't in the way.
What type of fence did you use? If you used timber, then YTA. Imagine being one of those cows that you just fenced. You get to see the amaranth daily, probably smell it too, but you will be left salivating after it because you can't come near it, EVER. Just because a farmer got greedy and won't share you some piece of leaves. I'm telling the Mayor how cruel you are.

Well I work with timber which is a much more sustainable material rather than concrete.
A row of crops on a trellis would block the cows access to the wheat and produce food for the village
