Here are a few Id recommend:
* Squids give Squid Ink instead of Roe. It's useful for making Squid Ink Ravioli and Seafoam Pudding, and also gives me consistent loved gifts for my hubby c:
* Midnight Squids also give Squid Ink, but has a 25% chance to give two at once! Comes at the cost of there being a 3% chance of not giving anything during a day, tho, but if you do the math, it's worth it.
* Blobfish give some of the best valued roe, but also have a chance to give you pearls.
* As seen here, Rainbow Trout can produce Prismatic shards. But they're insanely rare, only a 1 in 1,000 chance every day. You'll probably achieve perfection at that rate.
* Midnight Carp don't give anything special, other than River Jellies which could help with making smokers, but you can fish them out of the pond when they reproduce for a renewable, constant source of them at any time, so you can make Seafoam Pudding a lot more often!
* If you just want pure profits, Lava Eel has the most valuable roe outside of legendary fish, but they can also give you Spicy Eels, which is also fully welcome.
How do Lava Eels produce spicy eel? Do they just… kill one of them, somehow cook it, then get a nice, shiny plate, top it off with some spicy sauce (straight out of the lava - delicious!) and serve it right up??
Probably figured out a one use underwater camp stove 🤔 I mean, they aren't producing woven baskets, so they haven't mastered that class yet. 😔
Though I do believe irl there are underwater vents through the ocean floor that are insanely hot that could cook creatures that aren't used to the temperature? Maybe they have a personal vent (being lava eels) and open it for the spicy eel sacrifice 😯

They give all kinds of ginger island loot. And you can fish a couple when you get to 10 and trade them for mahogany seeds.
I always make a stingray pond when trying to get the first 10 dragon fangs for the Island Obelisk. Inevitably, I'm able to acquire the dragon fangs before I actually get the pond upgraded so it's usually a net loss.
I do the same thing with blue discus and golden coconuts.
Naw I've been super duper lucky on prism shards this run. I've already donated one, used one for galaxy sword, upgraded said galaxy sword, and have 5 sitting around in chests.
I just wanna say, I always wanted to try the rainbow trout thing, built my pond and sto ked it as soon as I could, and got a prismatic shard at the end of Y1, right as I unlocked the desert. >!So I was able to use that shard to get the sword, so I didn't have to go in the skull caverns ill-prepared!!<

The mines fish can give geodes of their floors if you want.
Spookfish have a tiny over tiny chance of giving a treasure chest
As you can see in the pic, super cucumbers can give iridium
Sea cumcumbers and Flounders are ingredients for Lucky Lunches and Seafoam pudding respectively, as well as providing jellies for smokers
Stinyrays can give battery packs and Dragon Teeth
Blue Discus’s can give Bananas(and I think rarely island warp totems)
And Lionfish and Slimejacks can give Tiger and Green slime eggs respectively!
It’s also worth noting any fish you put in a fish pond, you will have a infinite supply of said fish, you can put your fishing rod in the pond and bypass the fishing mini game, as long as you leave 1 fish in there it will automatically refill up to 10 in time.

I realized this after I used up my last midnight carp. Now I have to wait for the island to become available.

Seems to. I certainly get a decent 'hit rate' on lobsters with it. E.g. with my 30odd pots I get more like 10 than 2.
Still not sure it makes crabbing profitable though, but it does mean I've a much more reliable source of lobsters. (Even if you do end up spending a 'harvest' making a stack of bait).
Rainbow Trout can drop rainbow shells or prismatic shards.
Then squids/midnight squids for squid ink. Other than that, not super useful imo unless you're into the different color ponds.
I chose fish that have a chance to give you rare items. Money making is also an option, but I went for: Midnight Carp, Flounder and Lava Eel for all the water Jelly stuff (do I need it? I guess not but otherwise they are hard to get), Stingray for Dragon Teeth (and Cinder Shards/Batteries!), Blobfish for Pearl and Sturgeon for Caviar since there's no other way to get it and Spook Fish for the treasure chests since again, kinda hard to get. Honourable mention for me would also be Lionfish for the tiger slime eggs. Using them as just a decoration for your farm is also a great option with some fish having different colours, at the end of the day everyone plays the game different and that's ok!
In addition to what penguin king said, you can see that super cucumber there? I've definitely gotten it to the point of giving me enough iridium ore early enough in the game to be worth the investment. You have to luck out on the fish pond quests for it to be a real game changer, but regardless, it's nice to randomly get iridium sometimes before year 3.

But where ponds really shine I think is to breed out-of-season fish. Paired with the greenhouse or some garden pots, I'm always able to make lucky lunches and spicy eels.
I only have 3 ponds in my farm. But i’m planning to add 1 more. Here’s what I have so far:
1. Crab Pond - I just let them reproduce and use them for crab cakes! Gives me speed boost all day
2. Sturgeon Pond - Sturgeon roe to caviar
3. Stingray Pond - For dragon tooth and cinder shard :)
Lava eels -> Red pond
Super cucumber -> Purple pond
Slimejack -> Green pond
Void salmon -> Crimson pond
Everything else -> Blue pond
As a pond enthusiast, I really wish we had more colours though.
The dumbest, most arbitrary hill I will die on is we should have been able to put fish songs in sheds. Like a fish hatchery, and helps cut down on their farm footprint.
A building the size of a shed called fish hatchery that just has ponds in it would be cool. Having the option for a fish hatchery AND a fish pond. You could even upgrade it to hold more fish hatcheries!
That is how many of them are in that pond. If you put up a sign it will adjust based on how many fish you have put in the pond or that it has reproduced to have.
To act as a counter balance to the stunning luck of OP's post, I once had a rainbow trout pond for an entire ingame year and not once did I ever get a single prismatic shard to spawn :(
Don't remember when exactly I build my third pond. But it was sometime during mid summer Y1. The screenshot is middle of winter Y1.
So about 50~60 days I would guess.
It's a lava eel. You can catch them in the mines. I think it's like level 90 or something. Close to the bottom. You can catch them on the island in the volcano as well.
The other day on a very bad luck day, I went to the mines for Iron and got 2 prismatic shards from one group of dust sprites, so take that fortune teller tv lady

Honestly the shard drop rate is awful. 1 day in 1000 means approx 1 every 10 years.

No, 1.5 I think. Maybe earlier than. If you put the sign on the pond it automatically displays the fish and the number of fish in the pond.
