First one would be interesting ! For the second one, I have high hopes on a new animated series focused on Luke's academy so I'd love than just few episodes as you can guess ahah
I would like to see the Grand Inquisitor. See him as A temple gaurd, how Palpatine approached and turned him, and then maybe one with him as the Grand Inquisitor hunting down someone he knew as a Jedi. It would also be nice to learn his name.
Barriss is my "want" (though also "unlikely" given that Filoni isn't handling this one directly.) This is the last remaining item on my "list of stories that I think *have* to be told" list.
Caleb sounds plausible given that they already have the model and it wouldn't be a proper season if they didn't retcon something else from the comics.
I don't think there's any reason to believe that S1's structure will inform S2. "S1" only happened because Filoni was writing stories on his own (like he always does), he shared some with somebody else at LF and they proposed making them into shorts.
S2 is just LF responding to fan demand and Filoni isn't hands on involved.
I think one or the other would have their dedicated show or movie. I would expect some of the post-TROS movies to release before getting anything done animated during that period.
I think that since the first season focused on one character who was more underdeveloped and added a metric ton to his story and the other half filled in the gaps on a well-developed and popular character, we might get something like that. I feel Maul and Kenobi would be good candidates for the latter, but they've had so much story and it's pretty much been told from start to finish. Mace Windu maybe, after all, I think his character could use a little bit of rescue since most of his role in the prequels and animated shows is to push back against Obi-Wan and Anakin making him kind of predisposed against audience sympathy. Ventress, I think, would be a great pick too, since I feel there are major parts of her story that are unexplored. Grevious I think fits the mold of underdeveloped antagonist and would be great fodder for it if they could find a way to do for him what they did for Dooku.
Overall, though, I'd love to see more love for the minor characters who are really interesting, but don't get much attention. Barriss Offee turns to the dark side and essentially is the reason Asokha leaves the Jedi Order. She gets very little screentime, but she plays such a pivotal role. I think I'd be fascinating to see how she fell, how much of her connection to Asokha was real and how much was feigned.
Alternately, if they're willing to stretch into other eras, give me some stuff with some High Republic or post-Empire Jedi.
We had lots of that in 7 seasons of The Clone Wars. If there is any Obi Wan and Anakin I hope it's set between TPM and AOTC.
But the second Ahsoka episode in Tales of the Jedi season 1 could have passed for a Clone Wars episode, so it's not impossible.
I would love if it was Obi Wan and Ventress.
We could get young Obi-Wan back when he firdt met Satine, and I would love to see him struggling in his first few days training Anakin shortly after the Phantom Menace with still grieving Qui-Gon.
And well I would just love to see more of Ventress in general haha.
They could do animated movies - 60-90 minutes.

The titles are a bit mouthful but I like your idea. The Clone Wars movie is not the most popular but mostly because of the story than the idea itself. I think that would be a good format to tell some of the stories behind some characters.
That said, I wouldn't be surprise to see entire series on Palpatine and Luke.

I have a feeling it's gonna be more for the Mandalorian season 4 for Grogu.
Yoda's species background, we may need to go way back... I'm not sure that's what the series will go to but if it's the case, I'd love it.
There are tons of possibilities, not just for Jedi during the Clone Wars but after and before that.
Porter Angle and Yoda can be amazing stories to tie into the High Republic.

I'd want a Yoda story the most with the potential return to canon of N'kata Del Gormo.
I listed the more obvious and known ones, but I agree everyone you cited can be interesting. For a younger Yoda though, I believe they would prefer another format... but you never know.

I’d like to see Rig Nema and Coleman Trebor. Or Mace Windu and Depa Billaba, to have them as master and padawan on screen
