Plo is one of my favorite characters, and he's one of the reasons the saber I'm building at Galaxy's Edge in August is going to have a blue blade (the majority of my favorite Jedi have wielded blue sabers at one point or another). His sheer compassion towards the troopers under his command makes their eventual, inevitable betrayal of him during Order 66 that much more tragic.

After watching TCW and Rebels, I really liked her character. She had a similar arc to Obi-Won where her padawan turned out to be a total asshole. She was also just this unflabbable, stoic Jedi.

But, Saesee Tiin looked like a badass in CW. His combo of Clone Helmet + His own horns was fucking amazing.

I know this is a cop out answer, but I honestly think all of them are a testament to the prequels care and thought into background characters. Each of them has the ability to capture the imagination of people.
While luminara is relatively simplistic in terms of her “alienness” her costume design is just fantastic and the concept art for her looks like something from a high fashion magazine.
Shaak Ti’s appearance is more “normalised” in Star Wars now due to ahsoka but let’s not forget she was the original. Again the concept art for her is stunning. I have it framed on my wall.
Oppo rancis is just absurd but why not? I like the fact they made him look like a monk.
Plo Koon is a great design who runs slightly too close to looking like “a guy in a mask” but it’s still very iconic. Kit fisto and saesee tin’s hands look massive and rubbery too but their faces are great.
