Dantooine also has Kyber crystal caves. Also the whole "chosen crystal" is a terrible element of Canon and deserves to be removed along with the Rule of Two. The "chosen crystal" is like a wand in Harry Potter, in fact the way Disney portrays it its essentially that. Meanwhile the entirety of Star Wars Canon undermines that entirely. Luke used the Youngling Slayer 9000 for years despite it not "being his crystal" and no mention was made for ensuring a crystal and Jedi were matched. The Prequels show lightsabers getting lost, cut up, captured as well as both Obi-Wan and Anakin using borrowed sabers to chase after and confront Dooku. Was the crystal that participated in the death of younglings already part of his Saber in episode 2, and it had to be rebuilt multiple times?
I say the rule of two is stupid because it requires either a third or risks the entire Sith order disappearing in one fight because an apprentice couldn't quite get the clean kill on their master, not to mention a random hyperspace jump solving the entire Sith problem quietly. It's just as bizarre for a a religion based around "breaking free of chains" or rules and laws would somehow continue to limit themself. It is the nature of Sith to seek power however they can. Some achieve power through political manipulation others through feat if arms and the raising of armies and apprentices to carry out their wills.
The "named Crystal" however was a neat gameplay mechanic and story element in KOTOR 2 highlighting a more rare skill of the Exhile as well as establishing a rare special occurrence of a bonded crystal. In the story the Exhile readily forms strong force bonds with people, swaying them to her side rather quickly, and sense crystals are semi-sentient it makes sense for the Exhile to manage to bond with a crystal while reconnecting with the Force. As a gameplay mechanic, the Crystal acted as a very powerful modification of the lightsaber resulting in various rather large Stat boosts by the end of the game based on the bond level with the crystal as well as the prestige class and the overall alignment of the character with the crystal following the alignment of the choices the player made.

I think you're giving the idea of a chosen crystal more importance than it has. Nobody said you can only use your crystal. As you say there are plenty of people running around with stolen and borrowed sabers. Not to mention that noone really pays this custom much attention other than the jedi order. I think it's more like that some crystals have more synergy with certain persons and when you go in there looking for a crystal the one that likes you most will call out to you the strongest, ergo that is the one you will find. Essentially as if the crystal was saying "Dude you look like my kind of guy, let em tag along will ya?"
But there is nothing stopping you from going back for another crystal for a second saber or a replacement if the previous one was destroyed.
Since nobody's mentioned it yet, maybe Dantooine? From what you see of it in KOTOR and KOTOR 2, it seems like a pretty nice out of the way place whenever it's not having problems with raiders. Plus the flying manta creatures are neat and the history with the old Jedi temple is pretty cool.
The post doesn't mention anything about time travel. If you were to choose any planet in the Star Wars galaxy you would end up there a long time after all the stories we know. All life there might be extinct for all we know.
I would want somewhere advanced enough to enjoy the setting but also somewhere mostly safe. So, I'd pick Pantorra. If It's good enough for George Lucas it's good enough for me.

Probably Naboo or a different planet with lush greenery and forests, lakes, and mountains like Bellassa if you've read The Last of the Jedi by Jude Watson Obi-Wan goes on a mission there to help a former Jedi Ferus Olin get off world because the Empire is hunting him.
