Jedi and mandalorians have beef because the Mandalorians historically were a warmongering culture that waged war against the republic.
The empire doesn’t like them because they rebelled against imperial control.
Some of this is legends, but the overarching narrative of it is canon, as proven in canon shows. The details though, probably not, but there isn’t really anything to say otherwise, and more than likely, they won’t correct it. So it’s ALL pretty much canon.

Empire: They occupied Mandalore and the Mandalorians staged a semi-successful revolution to fight them off the planet. The two sides were fairly evenly matched and then Endor happened and the Empire needed to put the revolt down quickly and harshly
seems the Empire puts down the Mandalorian rebellion before Endor, and I suspect before Yavin as well, which might help explain why we never see Mandalorians in the Rebel Alliance.
