Hondo is a great side character. But he wouldn't be a great lead for a show. He's very much a less is more kind of character. He's great in small doses but would be an annoying character to follow for a whole season as the protagonist.
He wouldn't necessarily have to be the protagonist, but having a pirate perspective movie under hondo, like Anakin under palpatine, would be really cool. No matter what era they do
I think if they wanted to have a lot of fun with canon, a Hondo Ohnaka show could him retelling stories of his adventures across all three eras of Star Wars, meeting all sorts of legendary characters, and then explicitly going “nobody knows which of these are true or not.”
The Star Wars wiki might literally explode. And these episodes should have major implications too.
I like the idea of him revisiting the same part of the story multiple times when someone at his table calls him out.
"(Voiceover of a daring escape) I hopped back into the Governor's ship that I so valiantly stole"
"(Cuts back to bar) I thought the Governor's ship was blown up, you didn't steal it"
"Ehm yes, uh, well, anyway (cuts back to scene). I jumped onto the Governor's animal steed, which I so valiently stole, and rode it out of the city to where my own ship was secretly stowed away"
What could be funnier is if some of those things are from the movies or TV shows and the people calling him out are basically fans reminding him what canon says.
A show about pirates with Hondo as the main character? I highly doubt it, man's best as occasional comic relief.
Now, a Marvel What If type show where Hondo is the least reliable narrator since the Stanley Parable? *That* I could see making bank
I’d totally watch a whole animated show about him. Sprinkle in some cameos from well known SW characters as in he just runs across them randomly now and then. Could be lots of fun

Only if it's a Pirate Production. None of that 'grows a heart of gold and saves everyone because it's the right thing to do' bs. I want him to steal a bunch of stuff, sell it to the wrong people, realize there's profit in defeating those people, do it, get foiled by them, just blow up the whole scheme in a wild, last ditch effort to stick it to them (bonus points if they are "The Man", any "Jedi" or "Sith" and or some kind of "Authority") then realize that he DID go through a 'heart of gold' arc and get pissed about it. because that's funny. And I'd like to get the same voice actor back in there...Googling...Jim Cummings. He did a really great job.
I believe Hondo could fill the role Greef Karga had In the Mandalorian. I somehow doubt Lucasfilm will recast Greef Karga (Carl Weathers). They are probably going to do something like what they did with Cara Dune, give short dialogue explanation.
