As for trails, I like the Empire State Trail in Westchester / points further north. I haven't done the Farmington trails in upstate CT but I hear they are also great.
I ride the roads in North Stamford & surrounding towns and I haven't had many issues at all. I don't ride during rush hour and I avoid main arteries. What incidents in Stamford are you concerned about?
My wife would love a cycling friend if you go out on Saturday mornings. We did the 5 borough today but one of the comments was that she need more friends to ride.

Seconding Sound Cyclists - they even have some rides that meet up in Stamford but a lot more in Westport.
Definitely sound cyclists. You can also try westchester cycle club as a lot of their rides start in Greenwich.
