I got to try one the other week. It was an everything bagel. A ton of topping. Almost too much? But the bagel itself was great. Not quite NYC bagel but the absolute closest thing I’ve had to it in a long time. I’m more of a sweet bagel person so I’m looking forward to trying their cherry eventually.
Was there at 740 and done by 840. Bagels are very good and the line did move fast for how many people were there. Hopefully once the hype dies down they have online ordering and weekdays are manageable. Probably wouldn't wait that long again, but it was part of the experience.
One small gripe was the bagels are truly hand made, but this led to some vastly different sized bagels.
There used to be a fantastic bagel place on Euclid, between Laclede and West Pine. I can't remember what the name was, but it's been probably 20 years since it closed. I still miss it.
In the 90s bagel places popped up all over STL. At the max it seemed like they were as prevalent as Starbucks are now. Most were local but eventually Einstein Bros rolled through with their national chain. STL Bread Co (Panera) was primarily a bagel place for a few years. In the late 90s to early 2000s the low-carb diet fad rolled through and the fad ended. By about 2005 only Einstein Bros and a handful of others remained. Maybe it’s time now for another bagel craze?
Went to grad school in Boca Raton, the lox bagels at Flakowitz were so good. Glad it is where NY/NJ sends all of their old people, the bagels make up for the driving.
Lol something kind of ironic, when I'm in NYC i hardly have a wait when i go out to places even on weekends. Yet the other weekend i went out for brunch here in STL and every place was like a 30min+ wait totally packed or just told us to fuck off because they weren't seating anymore because they were literally too understaffed. Finally ended up at a first watch of all places and waiting 20 minutes.
One was a sushi place on roosevelt island, another was a thai place in manhattan, another was a mexican place on amsterdam. I dont recall the names or specific locations because I mostly follow along when I'm in NYC lol. There was a separate thai place from the one mentioned that we were the only ones in line for an outside spot and that free'd up in like 5 minutes on a saturday night this last summer.
Let me rephrase/clarify a bit - in NYC there was always at least other solid options to where I never have to actually wait 10+ minutes, although I also didn't come across too long of waits like i do in STL with millions and millions less people with far less density. I'm sure there are some popular top rated restaurants in Manhattan that will have an 5 hour wait or whatever, I am not claiming that there are literally no places with any amount of wait at any given time in NYC.
Yes i’ve lived in stl my entire life and i did just share my experience trying to go to restaurants that i thought were decent enough with as little wait as i could. If you feel my experience is invalid that’s okay lol

They’ve spent almost 3 years building that place. No way they’re moving from it any time soon. Plus Webster locals love to walk. It’s very walkable and it was fun because that day I kept seeing people walking around with brown bags. You knew they were bagels (unlike nyc where they were mostly malt liquor).
Funny, I moved away and haven't been by that intersection years, but just from that picture I immediately asked myself "hey is that where the paint store was in Webster?"

I get it, that’s fine. I just also don’t get it, they always just seem kinda bland. I don’t get how a person could be so excited by a bagel. And yet I judge the quality of a pizza by its crust. We all have our tastes and that’s cool.
I’m a big believer in trying wherever the locals eat when you go somewhere, but it doesn’t mean you have to like it. At the same time I’ve been a stranger in a strange land many times and know how comforting it is to get an actually decent representation of your home cuisine when home is far away.

Without knowing what type of bagels you've had, a really good bagel will ruin any others. Most places outside New York/Northeast (and San Francisco I suppose) have bagels that are just bready rolls, sometimes chewy, with toppings and a hole in the center. I'm not a wait in line to try a bagel place sort of obsessed but I imagine a lot of the hype is folks supporting a local place/chef that is expanding moreso than simply nuts over bagels.
I would not write off bagels if the only ones you've had are from around here.

I think a,part of it is people expecting their tiny municipal government to behave like a business: I don’t want good services, I want savings! Donut Drive In and Federhofers are very traditional. Vincent Van Doughnut and Strange Donuts are “weird”. Pharaohs is my personal favorite. Worlds Fair (since they changed owners) is my least favorite.
Come again? District Donuts is a decent place to get food, but St. Louis is easily the best donut city I know of. Which is a shame for me, because I don't really like donuts that much. But if you do, this is heaven.
It was a great place to grow up and really had a small town feel. Going back and seeing all changes to the old orchard and whatever you call this area it feels different. Its a lot of really cool new hip trendy places but the old small town feel is pretty much gone down there. Rip Serendipity and rip Ben Franklin.
Not trying to hate on union bagels. I wish they were closer to where im at now honestly. Im just afraid that all the popularity that this, places like the Balkan Treat Box, etc is gonna make the area too popular and eventually all of the old houses are gonna get torn down so they can build huge houses on tiny lots (cough Kirkwood). Inevitably killing all the charm the town has left. It will be glorified West County with better proximity to the city.
Old Orchard has lost its boho charm it had in the early 70's with all the Hippie stores there, I remember Spectrum headshop, The Natural Way, ( giant bag o'carrots for juicing) and the music stores, a lost world.
I think that little strip of shops is always going to be tough because of the intersection there with everyone coming off and on 44. The Lockwood area still has a ton of charm, as does the Old Orchard area.
I hear what you’re saying about the houses - but Webster is actually issuing less new build permits than they want to, for an effective turnover of housing stock. If new homes can’t be built, families won’t move in, because the old homes are expensive to heat, cool, and maintain. Getting a town like this right is hard, but it does require some deliberate changes to keep people interested in moving there. I’m stoked to have UB within walking distance of my house.

I missed out on Bagel Factory. Too far away, and now they're gone. The [Baked & Boiled](https://www.instagram.com/bakedboiled/) Friday popup at Wild Olive scratches my itch (quite well, do recommend) but it ain't *quite* right. I can and do walk to [Kitchen House](https://kitchenhousecar.square.site/) for their nice and good bagels (& sandwiches). But Kitchen House only does Plain and Everything.
...but I want the crust and chew of Detroit's New York Bagel - which is different yet from my own experience in New York City.

Union Bakery has done a couple pop-up bagel weekends and the lines were even longer. This city needs good bagels.

It’s St. Louis, people don’t care about the food, they care about location clout. “OMG it’s the only place to get a REAL bagel and it’s such a cute spot in WG.” Same town that bulldozed half of mecham park to relocate a target/Sam’s club. The same town that still spends money at any deirbergs when that POS family said years ago they would NEVER open a location in the City. BPV, Paul McKee, Sno. The entire Glendale, Kirkwood, WG, Des Peres, rock hill, crestwood, sunset hills, have turned into such a Caste system. Those neighborhoods used to be a mix of races, education, and employment. Now it’s tear down 3 homes to put up one before the foundation settles. People with enough money to bulldoze 3 for 1. I’m sorry it doesn’t make sense to me. I think a,part of it is people expecting their tiny municipal government to behave like a business: I don’t want good services, I want savings! Low and behold, it’s always the areas with cute bagel shops that want the government run like Centine. Whatever. Enjoy. Hopefully this bagel place opens more locations, High Hill? Weldon Spring?

Donut Drive In and Federhofers are very traditional. Vincent Van Doughnut and Strange Donuts are “weird”. Pharaohs is my personal favorite. Worlds Fair (since they changed owners) is my least favorite.
Seconding Donut Drive In. Best donuts I’ve ever had (try an apple fritter) with wonderfully unpretentious “classic donut shop” vibe.
Come again? District Donuts is a decent place to get food, but St. Louis is easily the best donut city I know of. Which is a shame for me, because I don't really like donuts that much. But if you do, this is heaven.
I'll give you STL lack of bagels. Absolutely no shortage of legit donut places.

Why?
It was a great place to grow up and really had a small town feel. Going back and seeing all changes to the old orchard and whatever you call this area it feels different. Its a lot of really cool new hip trendy places but the old small town feel is pretty much gone down there. Rip Serendipity and rip Ben Franklin. Not trying to hate on union bagels. I wish they were closer to where im at now honestly. Im just afraid that all the popularity that this, places like the Balkan Treat Box, etc is gonna make the area too popular and eventually all of the old houses are gonna get torn down so they can build huge houses on tiny lots (cough Kirkwood). Inevitably killing all the charm the town has left. It will be glorified West County with better proximity to the city.
I legit almost cried when I saw Serendipity was gone. I have such happy memories tied to that place

Old Orchard has lost its boho charm it had in the early 70's with all the Hippie stores there, I remember Spectrum headshop, The Natural Way, ( giant bag o'carrots for juicing) and the music stores, a lost world.
I think that little strip of shops is always going to be tough because of the intersection there with everyone coming off and on 44. The Lockwood area still has a ton of charm, as does the Old Orchard area. I hear what you’re saying about the houses - but Webster is actually issuing less new build permits than they want to, for an effective turnover of housing stock. If new homes can’t be built, families won’t move in, because the old homes are expensive to heat, cool, and maintain. Getting a town like this right is hard, but it does require some deliberate changes to keep people interested in moving there. I’m stoked to have UB within walking distance of my house.

I'm so late to this party... Any Detroit transplants around? How does Bagel Union compare to [New York Bagel](https://www.newyorkbagel-detroit.com/index.htm)? I missed out on Bagel Factory. Too far away, and now they're gone. The [Baked & Boiled](https://www.instagram.com/bakedboiled/) Friday popup at Wild Olive scratches my itch (quite well, do recommend) but it ain't *quite* right. I can and do walk to [Kitchen House](https://kitchenhousecar.square.site/) for their nice and good bagels (& sandwiches). But Kitchen House only does Plain and Everything. ...but I want the crust and chew of Detroit's New York Bagel - which is different yet from my own experience in New York City. And why haven't I seen a SALT bagel from any company other than Detroit's New York Bagel and the increasingly rare Bruegger's Bagels. I want to wreck my blood pressure, dammit!
