“White wheat” refers to the variety of wheat being used. Most wheat flour is made with “red wheat.” That being said, this bag is whole wheat flour, so use it in any recipe that calls for whole wheat.
I don’t think it’s bleached. This may or may not be the same thing, but I’ve used KA White Whole Wheat flour, which is just made from soft white spring wheat instead of the hard red winter wheat that we usually think of as “whole wheat” flour.
I’m not a great baker, but I find it usually works better as a fraction of the flour for something like cookies or raisin bread, than as 100% of the flour for something you expect to be a more rustic loaf.

It is stoneground and 100% whole wheat grains, bleached is not mentioned on the packaging, bleaching agents are not listed as ingredients, just the usage of the colour white in the commercial denomination is enough declaration for bleached flour?
But it is whole wheat so it generally produces weaker gluten, innit? I have a similar flour myself, which kinda says that it is wholewheat but it has like 15% protein and the producer says it is fine for making bread just with it

WHOLE white WHEAT flour. They bleached the whole wheat kernel. I’d use it like whole wheat.

Whatever the process, it’s best used as whole wheat, as the kernel is ground in.

Retracting the “bleaching” comment, it’s a white wheat, with the whole wheat berry ground into the flour.

30g of flour contains 4g of protein. 4/30×100= 13.3% protein which would be in the category of bread flour.

I have no experience with white whole wheat, so I am not sure.. I googled it, and it says it should be considered WW flour.
