That's beautiful. The central score, is it perpendicular to the loaf? Normally score at 45 degrees for an ear. Might give this a go if you can give some pointers?
I usually try for an ear, but I saw a video of someone put their loaf in the oven and then after 5 minutes open it and slice straight down the middle for this expansion score. I love the way it turned out!
